Edible fungus health drinks are not only nutritious, delicious, but also have a significant inhibitory effect on tumors. Here are some methods for processing edible fungus beverages developed in Japan.
1. Ash Tree Health Drink:
(1) Process flow. Mushroom body crushing → Hot water extraction → Filtration → Concentration → Cryoprecipitation → Separation → Formulation → Bottling → Sterilization → Finished products.
(2) Operation points. The Grifola frondosa fruit body was crushed and finely pulverized to increase the extraction rate. When hot water is leached, the feed water ratio is 1:10-15. The mixture is heated at 96 to 100°C for 2 to 3 hours to convert the soluble component into a liquid phase, and then the residue is filtered off. In order to increase the extraction rate, the residue can be re-extracted once. The main components of the filtrate contain amino acid, peptides, nucleic acids, and a small amount of minerals in addition to Grifola frondosa polysaccharides and pectin. The solids content of the filtrate is generally about 1% to 2%, and it needs to be concentrated to about 10%. Not too strong, otherwise the viscosity will increase, which is not conducive to the precipitation of pectin. The concentration method is preferably concentrated under reduced pressure. The sediment collected on the bottom was separated by a siphon centrifuge. The isolated Grifola frondosa extract contains 7.55% of soluble solids, 7.0 degree of sugar, 4% of total sugar, 1.1% of crude protein, 0.7% of crude ash, and pH of 6.0, and then sugar and organic acid are added. According to the conventional method, tin cans are loaded into the tin cans, and after sterilization, ash tree flower health beverages that are resistant to storage and flavors can be obtained.
2. Armillaria health drink: The mycelium obtained by the deep culture method can be processed to make the honey fungus health drink. The preparation method comprises the following steps: adding the mycelium obtained from the deep culture to 1 times water and heating to 80° C., keeping the temperature for 1 hour, and vacuum-filtering to concentrate to a specific gravity of 1.1 1.21.2. According to the ratio of 60% of honey fungus concentrate, 0.2% of citric acid, 2% of milk powder, 0.4% of sodium benzoate, and 37.8% of ion-free water, the beverage is prepared and then heated to 60°C, stirred and allowed to cool to 50°C and then filtered. Bottling and sterilizing are finished products.
3. Lentinus health drink: Weigh 100kg of fresh shiitake mushrooms and crush it into pieces of 1cm in size. Put it into a stainless steel container equipped with a stirrer and steam heating coil. Add 100kg of coconut water and heat up to 60°C. Slowly stir and extract for 15 hours. Filter to obtain the extract. The 100 kg extract was placed in a stainless steel container equipped with a stirrer and steam heating coil, and was slowly added with 50 g of emulsifier (a 1:1 mixture of sorbitan monostearate and stearic monoglyceride). 2 kg of coconut oil was stirred and 5 g of pepper, 5 g of sodium glutamate and 10 g of salt were added, and the temperature was raised to 60°C. Stirring and inputting the homogenizer, the bottled sterilized milky mushroom health drink.
4. Flammulina health drink: 55 g of glucose, 0.2 g of potassium dihydrogen phosphate, 0.4 g of dipotassium hydrogen phosphate and 0.2 g of magnesium sulfate were added to 1 kg of coconut water to prepare a culture solution. The culture solution is placed in a pre-sterilized container, sterilized by hot steam and cooled, and then the mushroom strain is introduced. Incubate at 25°C and incubate sterile air at a rate of 140 revolutions per minute for 7 days. After filtration, the filtrate A was obtained. The filtered mycelium was subjected to hot water leaching, concentrated under reduced pressure, and filtered to obtain filtrate B. The A and B filtrates were mixed and scientifically formulated and bottled to be sterilized and made into mushroom health drink.
5. Tremella Health Drink: Weigh 50 kg of white fungus into a stainless steel container equipped with a stirrer and steam heating coil, and then add 2.5 tons of coconut water, heated to 70 ° C, slowly stirred for extraction for 3 hours, squeezed and filtered to obtain the extract . 100 kg of this extract was placed in the same container and sugar 10 kg, 70% aqueous solution of sorbitol 1 kg, 500 g of citric acid, and 600 g of sodium alginate as a stabilizer were added and stirred at 40°C. The mixture is then sterilized by bottling to make Tremella Health Drink.
